Pam - For the Love of Cooking
1½ - 2
fresh lemon juice
(more or less - to taste)
more if needed, depending on the sweetness of the melon
Blend the pieces of watermelon in a blender on high until well pureed.
Pour the pureed watermelon through a fine-mesh strainer lined with a cheesecloth into a pitcher.
Gather up the sides of the cheesecloth and squeeze to remove all watermelon juice. Discard excess pulp and cheesecloth.
Add the water and fresh lemon juice.
Taste and add sugar as needed depending on the sweetness of the watermelon.
Pour over ice and serve with lemon wedges. Enjoy!
Side Note: To make popsicles, simply pour the well-shaken watermelon lemonade into either popsicle molds or plastic ice pop molds, seal, and freeze. Enjoy!
