Preheat your oven to broil with the rack in the center of the oven. Line a baking sheet with tin foil then coat with cooking spray.

Combine the flour with paprika, onion powder, garlic powder, oregano, thyme, sea salt, and freshly cracked pepper; mix well. Side Note: Be careful not to add too much salt because the pickles will already be salty.
Dip the pickle slices into the flour mixture; then dip into the beaten egg, finally coat evenly with the panko crumbs. Place onto the prepared baking sheet. Repeat with the remaining pickle slices.
Place into the oven and broil for 3-4 minutes under the broiler, making sure to watch carefully so they don't burn. Flip the pickles over and cook under the broiler for another 3-4 minutes, or until golden brown. Remove from the oven and serve with the chipotle ranch, if desired. Enjoy.
