Mini Chocolate Chip and Coconut Cookies

  • 1 3/4 cups flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/4 cup unsalted butter softened
  • 1/4 cup coconut oil melted
  • 1/2 cup packed brown sugar
  • 1/3 cup white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips + 1 tbsp for cookie tops
  • 1/2 cup shredded coconut sweetened


  • Preheat the oven to 350 degrees. Line a baking sheet with silpat mat.
  • Combine the flour, salt, and baking soda together; mix well.
  • Cream the butter, coconut oil, sugars, egg, and vanilla together until creamy and smooth with a beater. Slowly mix in the flour, until combined. Stir in 1/2 cup mini chocolate chips and coconut.
  • Roll dough into tiny balls (about 2 teaspoons of dough). Place on baking sheet and slightly flatten with the palm of your hand. Place a few mini chocolate chips on the top of each cookie, if needed.
  • Place into the oven and bake for 8 minutes or until cookies are golden brown and set. Remove from the oven and let cool on baking sheet for two minutes. Transfer to a wire rack to cool.
