Pan Grilled Asparagus with Lemon Shallot Vinaigrette

  • 1 tbsp olive oil
  • Juice & zest of one lemon
  • 1 tbsp shallot finely diced
  • 1 clove of garlic minced
  • Sea salt and freshly cracked pepper to taste
  • 1 bunch of asparagus wooden ends trimmed
  • Parmesan cheese shredded


  • Combine the olive oil, lemon zest, lemon juice, shallot, garlic, sea salt, and freshly cracked pepper together with a whisk until well combined. Set aside to let the flavors mingle. Side Note: If your shallot's flavor is too strong, soak in cold water for a few minutes prior to making the vinaigrette.
  • Heat a grill pan over medium heat; coat with cooking spray. Place the asparagus into the grill pan and season with sea salt and freshly cracked pepper, to taste. Cook the asparagus for 3-4 minutes then flip and cook for another 2-3 minutes or until tender.
  • Toss the asparagus with some of the lemon vinaigrette then place onto a serving platter and sprinkle with Parmesan cheese. Serve the asparagus with the remaining sauce on the side. Enjoy.
