Garlic Butter Roasted Shrimp with Parmesan

Ingredients

  • 1 lb shrimp, shelled & de-veined, (I used extra large 26/30)
  • 2 tsp olive oil
  • Sea salt and freshly cracked pepper, to taste
  • Fresh red crushed pepper, to taste
  • 2 tbsp salted butter
  • 2 cloves of garlic, minced
  • 1 tbsp fresh parsley, chopped

Instructions

  • Preheat the oven to 400 degrees. Line a baking sheet with tin foil then coat with cooking spray.
  • Peel and de-vein the shrimp, making sure to leave the tails on.
  • Drizzle the shrimp with the olive oil then season both sides with sea salt, freshly cracked pepper, and crushed red pepper flakes, to taste.
  • Place into the oven and roast for 4 minutes. Remove from the oven.
  • Combine the melted butter with the minced garlic; mix until well combined.
  • Drizzle the melted garlic butter over the shrimp then toss to coat evenly.
  • Place back into the oven to roast for 4-5 minutes, or until pink and cooked through.
  • Remove from the oven and sprinkle the top with freshly grated parmesan.
  • Serve immediately with lemon wedges (and cocktail sauce), if desired. Enjoy!
