Greek Salad Skewers

Marinated Feta:

  • 3 tbsp good olive oil
  • 1 tbsp fresh lemon juice
  • 1/2 tbsp fresh dill, chopped
  • 1/2 tbsp fresh parsley, chopped
  • 1 clove of garlic, minced
  • Sea salt and freshly cracked pepper, to taste
  • Block feta, diced into 8 bite sized pieces


  • 1/4 red onion, cut into 8 bite sized pieces
  • 8 cherry tomatoes
  • 1/4 English cucumber, peeled, halved Lengthwise & sliced
  • 8 kalamata olives


  • Marinate the feta by combining the olive oil, lemon juice, dill, parsley, minced garlic, sea salt and freshly cracked pepper to taste.
  • Mix well then add the feta cubes and gently toss to coat. Set aside to allow flavors to mingle. 
  • If your red onion is very strong flavored, place cut pieces in a bowl of ice water for 15 minutes then drain well on paper towels.
  • Assemble the Greek salad skewers by layering the cherry tomatoes, red onion, cucumber, olives, and marinated feta on small wooden skewers.
  • Place on a serving plate. Serve and enjoy.
