Marinate the feta by combining the olive oil, lemon juice, dill, parsley, minced garlic, sea salt and freshly cracked pepper to taste.
Mix well then add the feta cubes and gently toss to coat. Set aside to allow flavors to mingle.
If your red onion is very strong flavored, place cut pieces in a bowl of ice water for 15 minutes then drain well on paper towels.
Assemble the Greek salad skewers by layering the cherry tomatoes, red onion, cucumber, olives, and marinated feta on small wooden skewers.
Place on a serving plate. Serve and enjoy.
