Allow vinaigrette's flavors to mingle for best results
Lemon vinaigrette, to taste

grape tomatoes, halved
cucumber, peeled and sliced
white beans, rinsed and drained
red onion, sliced thinly
**Soak onion slices in ice water for a few minutes if they are too strong in flavor. Dry on towel before adding to salad

Set the vinaigrette aside for 30 minutes to allow flavors to mingle.
Make the salad
by placing the mixed greens, tomatoes, cucumber, white beans, and onion in a large bowl.
Drizzle with some well-whisked lemon vinaigrette, to taste, then gently toss to coat evenly. Season with freshly cracked black pepper, to taste.
Serve immediately. Enjoy
