  • Cast Iron Skillet

  • Greek seasoning blend, to taste
  • Sea salt and freshly cracked pepper, to taste
  • 5 chicken thighs, bone in and skin on
  • 1 tbsp olive oil

  • Season both sides of the chicken thighs with the seasoning blend, to taste. Season both sides with a bit of sea salt and freshly cracked pepper, to taste.
Side Note: If time permits, season the chicken and place on a plate in the refrigerator uncovered for a few hours before cooking. Remove the chicken from the refrigerator 30 minutes prior to cooking.
  • Preheat the oven to 400 degrees.
  • Heat 1 tablespoon of olive oil (or butter) in a cast iron skillet over medium high heat.
  • Place directly into the HOT skillet skin side down, and cook for 4 minutes, or until the skin is golden brown and flips easily.
  • Flip the chicken over and place into the preheated oven. Roast in the oven for 20-25 minutes, or until the chicken is golden brown and cooked through.
  • Remove from the oven and use tongs to remove the chicken from the skillet to a serving plate. Serve the chicken thighs with fresh lemon on the side. Serve immediately. Enjoy.
