Drizzle the cauliflower slices with olive oil, sea salt, and freshly cracked black pepper, to taste. Gently toss to coat evenly. Spread the cauliflower out over the baking sheet.
Roast in the oven for 10-12 minutes, or until golden brown. Carefully flip the cauliflower pieces over and continue to roast for another 5 minutes, or until golden brown and tender.
Remove from the oven and sprinkle the top with shredded cheese and some bacon bits. Return to the oven for 3 minutes, or until the cheese is melted.
Remove from the oven and top with sliced green onions and a drizzle of ranch dressing. Serve immediately. Enjoy.
