Ingredients
Dressing:
1½tbspfresh lime juice
1tbspseasoned rice vinegar
1tbspvegetable oil
1-1½tspfish sauce, to taste
1smallclove of garlic, minced
Cucumber Herb Salad:
1English cucumber, sliced thinly
¼smallred onion, sliced thinly
1green onion, sliced thinly
¼cupfresh cilantro, chopped
¼cupfresh mint leaves, chopped
For Serving:
Black sesame seeds
Toasted sesame seeds
Crushed red pepper flakes, to taste
Crushed peanuts, optional
Instructions
Make the dressing by whisking together the lime juice, rice vinegar, oil, fish sauce, and minced garlic until well combined. Set aside until needed.
Make the salad by tossing together the cucumber, red onion, green onion, cilantro, and mint; drizzle with the well-whisked dressing and toss to coat evenly. Top with black sesame seeds, toasted sesame seeds, and crushed red pepper flakes, to taste.
Serve immediately or cover and refrigerator for a couple of hours prior to serving. Enjoy.
