Tropical Granola Bars
My kids requested more homemade granola bars for their school snacks so I decided to make them another batch. This time they wanted white chocolate and coconut. I threw in some macadamia nuts and craisins too for a tropical granola bar. My kids loved them. This is a quick and easy recipe with very little cleanup and is fun to do with your kids.
Tropical Granola Bars:
Ingredients:
- 2 cups of old-fashioned rolled oats
- 1/2 cup macadamia
- 1/3 cup of honey
- 1/4 cup of brown sugar
- 2 tbsp unsalted butter, plus extra for pan
- 2 teaspoons vanilla extract
- 1/4 teaspoon kosher salt
- 1/2 cup of shredded coconut
- 1/2 cup of white chocolate chips
- 1/4 cup of craisins
How to Make Tropical Granola Bars
Preheat the oven to 350 degrees. Butter a 9 by 9-inch glass baking dish and set it aside.
Spread the oats and macadamia nuts onto a baking sheet pan. Place in the oven and toast for 5-7 minutes, stirring occasionally.
In the meantime, combine the honey, brown sugar, butter, extract and salt in a medium saucepan and place over medium heat. Cook until the brown sugar has completely dissolved.
Once the oat mixture is done baking, remove it from the oven and reduce the heat to 300 degrees.
Immediately add the oat mixture to the brown sugar mixture, next add the coconut, white chocolate chips, and craisins then stir to combine. Spread mixture evenly into the prepared baking dish and press down, evenly distributing the mixture in the dish and place in the oven to bake for 25 minutes.
Remove from the oven and allow them to cool completely. Cut into squares or bars, wrap individually in saran wrap then store in an airtight container for up to a week. Enjoy.

Yippee! You're timing of this is absolutely perfect for me. Really. I was just searching the other day for some homemade granola (or cereal bars) to make, but everything seemed to have peanut butter in them (which my 3Y0 doesn't like). These sound/look fantastic. LOVE all the ingredients you chose.

These are upscale granola bars for sure! Yum! I'm a fan of anything with oats in them. I had a snack a few weeks ago that was little granola clusters. They were sooo good!
