It’s good to be back cooking and baking again. I took two weeks off to spend time with my family over the holiday break. We had a wonderful time relaxing, sleeping in, eating tons of tasty food, taking a fun road trip to California, skiing some fresh powder, playing lots and lots of board games, watching movies, and spending time together. I hope you all had a wonderful holiday season!

I found a recipe for these Nutella muffins on Can’t Stay Out of the Kitchen and since it had good reviews I decided to make them. I was a bit worried while making them because the batter seemed very thick and I wasn’t used to using vegetable oil and butter in a muffin recipe but forged ahead hoping for the best. They turned out to be really tasty and my kids both enjoyed them and deemed them blog-worthy.

How to Make Nutella Muffins

Preheat the oven to 400 degrees. Coat a muffin pan with cooking spray.

In a small bowl, stir together the flour, baking powder, and salt together until well combined.

In a separate large bowl, beat the butter, oil, sugar, eggs, and vanilla with a hand mixer until creamy and smooth.

Add the flour mixture to the batter until just combined.  

Spoon the batter evenly into the muffin pan. Side Note: This recipe only made 10 regular-sized muffins for me.

Spoon 1 tablespoon of Nutella on top of each cup of muffin batter then swirl with a wooden skewer or chopstick.

Place into the oven and bake for 5 minutes. Reduce the heat to 350 degrees and continue to cook for 13-15 minutes, or until a tester inserted in the center comes out clean. Remove from the oven and cool in the pan for a few minutes before putting them on a wire rack to finish cooling.

Side Note: Starting the baking at a higher temperature then reducing it helps make the muffin dome.

    The recipe was straightforward, but the last step was tricky. Swirling a tablespoon of Nutella into an already-filled muffin tin gets a little messy and I had trouble getting the Nutella to incorporate into the batter. In the end the muffins were just okay, not really worth the effort. But thanks as always for the recipe ideas.
