Cook the bacon pieces in a nonstick skillet over medium heat until crispy and cooked through. Remove from the pan and place them on a paper towel to drain; set aside until needed.
Meanwhile, bring a large pot of water to a boil over high heat. Season the water very well with kosher salt.
Blanch the green beans in the boiling water for 2-3 minutes, stirring occasionally, or until they are just crisp-tender. Remove from the water and place them on a tea towel to drain.
Meanwhile, remove all but 2-3 teaspoons of bacon grease from the skillet. Add the shallot and cook, stirring often for 2 minutes.
Add the green beans and minced garlic then cook, stirring often, for 1-2 minutes. Season with sea salt and freshly cracked pepper, to taste.
Place the green beans on a serving plate then top with crumbled bacon bits, crumbled feta cheese, and toasted pine nuts. Serve and enjoy.
