Green Beans with Bacon and Feta Cheese
Green beans sauteed with shallots & garlic then tossed with crispy bacon, feta cheese, and toasted pine nuts. Quick, simple, and delicious.
I love side dishes like this that are easy to make, use up ingredients I have in the fridge, and is ready & on the table within 30 minutes. These tasty green beans with bacon and feta cheese are inspired by a recipe I found on Allrecipes. These green beans paired nicely with some juicy pork chops and the Duchess baked potatoes and they were a hit with the family.
How to Make Green Beans with Bacon and Feta Cheese
Cook the bacon pieces in a nonstick skillet over medium heat until crispy and cooked through. Remove from the pan and place them on a paper towel to drain; set aside until needed.
Meanwhile, bring a large pot of water to a boil over high heat. Season the water very well with kosher salt.
Blanch the green beans in the boiling water for 2-3 minutes, stirring occasionally, or until they are just crisp-tender. Remove from the water and place them on a tea towel to drain.
Meanwhile, remove all but 2-3 teaspoons of bacon grease from the skillet. Add the shallot and cook, stirring often for 2 minutes. Add the green beans and minced garlic then cook, stirring often, for 1-2 minutes. Season with sea salt and freshly cracked pepper, to taste.
Place the green beans on a serving plate then top with crumbled bacon bits, toasted pine nuts, and feta cheese. Serve and enjoy.
