Roasted Carrots with Feta
Olive oil, honey, and garlic roasted carrots topped with feta and fresh dill make a simple and tasty side dish!
I wanted a simple side dish to pair with the brined pork chops and Greek-style roasted green beans and potatoes I was serving for dinner and found this easy roasted carrots with feta recipe on Heart Healthy Greek that looked perfect. These delicious and flavorful carrots were quick, easy to make, and paired nicely with the rest of the meal.
Roasted Carrots with Feta
Ingredients:
- ¾ lb carrots, about 8 small carrots, peeled and sliced in half lengthwise
- 1 tbsp olive oil
- 1 tbsp honey
- ½ tsp water
- 1 small clove garlic, minced
- Sea salt and freshly cracked pepper, to taste
- 1 tbsp fresh dill, chopped
- Feta cheese crumbles, to taste
How to Make Roasted Carrots with Feta
Preheat the oven to 425 degrees.
Line a baking sheet with parchment paper and spread the carrots out evenly on the sheet.
Whisk together the olive oil, honey, water, garlic, sea salt, and freshly cracked black pepper, to taste, and pour on top of the carrots.
Bake for 20-25 minutes stirring halfway through.
Remove the carrots from the oven and place them on a serving plate.
Top with the feta cheese crumbles and fresh dill. Serve immediately. Enjoy.
