Pork Chops with Tomatoes, Caramelized Onions, and Feta Cheese

Ingredients
2tbspolive oildivided
½yellow onionsliced thinly
3clovesof garlicminced
5thin-cut pork chops
1handful of red grape tomatoes
1handful of yellow grape tomatoes
Sea salt and fresh cracked pepper
2tspbalsamic vinegar
2-3tbspof feta cheeseto taste
2tbspfresh basilchopped
Instructions
Heat 1 tbsp olive oil in a large skillet over medium heat. Add onions and a bit of salt then sauté until lightly golden brown and slightly caramelized, about 15-20 minutes.
Add minced garlic, stirring frequently for 60 seconds. Remove from pan and set aside.
In the same large skillet, heat the other tablespoon of olive oil over medium-high heat and season the chops with sea salt and freshly cracked pepper, to taste.
Make sure the pan is nice and hot before adding pork. Cook for 2 minutes before turning over. Cook for additional 1-2 minutes to the desired degree of doneness.
Remove from heat to a serving platter. Make sure to let pork rest for 3-5 minutes before slicing so it stays nice and juicy.
Add the grape tomatoes and cooked onions to the same skillet then season with salt and pepper to taste. Cook for 3-4 minutes to cook the tomatoes slightly.
Pour the tomatoes and onions on top of the pork, and drizzle the top with balsamic vinegar, to taste. Top with feta cheese and fresh basil. Enjoy!
