Ingredients
1sheet of pastry doughthawed and cut into 4 (5-inch) squares
1tbspbutter
1tbspshallotminced
1cloveof garlicminced
1tbspflour
½cupof whole milk
Sea salt and freshly cracked pepperto taste
Pinchof nutmeg
1 ½cupsof gruyere cheeseshredded
1cupof hamdiced
1cupof baby spinachchopped
1eggwell beaten
Chivesfor serving, if desired
Instructions
Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
Prepare the thawed puff pastry by cutting the sheet into 4 (5-inch) squares. Place them on the prepared baking sheet and then into the refrigerator until needed.
Prepare the filling by heating the butter in a medium skillet over medium heat. Add the shallot and cook, stirring constantly for 2 minutes. Add the garlic and cook, stirring constantly for 30 seconds.
Add the flour and cook, stirring constantly for 1 minute.
Gradually add the milk while whisking until bubbling. Reduce the heat to low and allow the mixture to simmer, stirring occasionally, until it begins to thicken. Season with sea salt, freshly cracked pepper, and nutmeg, to taste.
Finish the filling by adding 1 cup of the cheese along with the ham and spinach then stir to combine. Remove from the heat and set aside to cool.
Prepare the ham and cheese puffs, once the filling has cooled, scoop a heaping spoonful of the creamy ham mixture in the center of each puff pastry square. Sprinkle with remaining grated cheese evenly.
Fold the corners up onto the top, forming another square. Brush each pastry with a well-beaten egg.
Place into the oven to bake for 18-20 minutes, rotating the baking sheet halfway through baking time.
Remove from the oven and top with snipped chives, if desired. Serve immediately. Enjoy.
