Ham and Cheese Puffs
Flaky puff pastry cradling a creamy mixture of ham, gruyere, and spinach makes these ham and cheese puffs a delicious and decadent breakfast!
I first saw this easy ham and cheese puffs recipe on I am Baker and thought they would make a tasty breakfast that we would all enjoy. These ham, cheese, and spinach puffs were easy to make and turned out rich, cheesy, salty, creamy, and so delicious! I’ll be making these little beauties again for breakfast on Easter Sunday.
Ham and Cheese Puffs
Ingredients:
- 1 sheet of pastry dough, thawed and cut into 4 (5-inch) squares
- 1 tbsp butter
- 1 tbsp shallot, minced
- 1 clove of garlic, minced
- 1 tbsp flour
- 1/2 cup of whole milk
- Sea salt and freshly cracked pepper, to taste
- Pinch of nutmeg
- 1 1/2 cups of gruyere cheese, shredded
- 1 cup of ham, diced
- 1 cup of baby spinach, chopped
- 1 egg, well beaten
- Chives, for serving, if desired
How to Make Ham and Cheese Puffs
Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
Prepare the thawed puff pastry by cutting the sheet into 4 (5-inch) squares. Place them on the prepared baking sheet and then into the refrigerator until needed.
Prepare the filling by heating the butter in a medium skillet over medium heat. Add the shallot and cook, stirring constantly for 2 minutes. Add the garlic and cook, stirring constantly for 30 seconds.
Add the flour and cook, stirring constantly for 1 minute.
Gradually add the milk while whisking until bubbling. Reduce the heat to low and allow the mixture to simmer, stirring occasionally, until it begins to thicken. Season with sea salt, freshly cracked pepper, and nutmeg, to taste.
Finish the filling by adding 1 cup of the cheese along with the ham and spinach then stir to combine. Remove from the heat and set aside to cool.
Prepare the ham and cheese puffs, once the filling has cooled, scoop a heaping spoonful of the creamy ham mixture in the center of each puff pastry square. Sprinkle with remaining grated cheese evenly.
Fold the corners up onto the top, forming another square. Brush each pastry with a well-beaten egg.
Place into the oven to bake for 18-20 minutes, rotating the baking sheet halfway through baking time.
Remove from the oven and top with snipped chives, if desired. Serve immediately. Enjoy.

They look flakey and would seem to go well with some fluffy scrambled eggs.
