Small Cast Iron Skillet
Ingredients
1
baguette
sliced thinly
8
oz
brie round
2
cups
fresh
or frozen cranberries
¾
cup
sugar
½
cup
water
⅓
cup
balsamic vinegar
Instructions
Preheat the oven to 350 degrees.
Prepare the crostini
by placing the baguette slices on a baking sheet. Put them in the oven to bake for 5-7 minutes, or until slightly crisp.
Remove from the oven and allow to cool.
Bake the brie
by coating a small cast iron skillet with olive oil cooking spray.
Place the brie round in a small cast-iron skillet, then put it into the oven.
Cook for about 15-20 minutes, or until the brie is softened & getting gooey. Remove from the oven.
Make the cranberry balsamic compote
while the cheese is baking.
Place the cranberries, sugar, and water in a saucepan over medium heat.
Cook, stirring occasionally, until the cranberries pop, about 10 minutes.
Add the balsamic vinegar and continue to cook, stirring occasionally, for 5 minutes, or until it thickens a bit.
Spoon some of the cranberry balsamic compote over the baked brie and serve with the warm crostini. Enjoy!
