Baked Eggs with Caramelized Mushrooms, Onions, and Spinach

Ingredients
1tbspbutter (or olive oil)Plus more for ramekins
½yellow oniondiced
1cupof baby button mushroomssliced in half
1cupof baby spinach
3eggs
3tspheavy cream
Sea salt and freshly cracked pepperto taste
Instructions
Preheat the oven to 350 degrees. Coat three small ramekins with butter
Heat the butter and olive oil in a large skillet over medium heat. Add the onion, and cook, stirring often, for about 3 minutes.
Add the mushrooms, and cook for 2-3 minutes before stirring. Once the mushrooms are golden brown and the onions are tender, add the minced garlic and spinach to the skillet and cook, stirring constantly, for 1 minute. Season with sea salt and freshly cracked pepper, to taste. Remove from the skillet and divide equally into the three ramekins.
Crack an egg into each ramekin, being careful not to break the yolks.
Add 1 tsp of milk into each ramekin. Season with sea salt and freshly cracked pepper, to taste.
Place on a baking tray and bake for 5 minutes.
Turn the oven to broil and cook for another 5 minutes or until the whites are set, but the yolk remains soft.
Remove from the oven and serve immediately. Enjoy.
