Drizzle 2 teaspoons of olive oil in the bottom of a very small cast-iron skillet. Swirl to coat the bottom of the skillet.
Place ½ of an 8 oz block of feta cheese (4 oz) in the center of the very small cast-iron skillet.
Top with halved grape tomatoes, sliced kalamata olives, sliced shallots, and garlic slivers. Sprinkle with crushed red pepper flakes, then season with a touch of sea salt and lots of freshly cracked pepper to taste.
Drizzle the top with 2 teaspoons of olive oil.
Place in the oven and bake for 20-25 minutes, or until the cheese starts getting gooey and the tomatoes are tender. (Side Note: Some Feta cheeses will be slightly squishy instead of melty).
Place the flatbread in the oven for the last 5 minutes of baking time.
Remove from the oven.
Cut the flatbread into triangles and place them on a serving plate.
Top the baked feta with tomatoes, olives, and garlic, and add the remaining 1 teaspoon of olive oil, fresh oregano, and lemon zest.
