1cupvery ripe bananas, mashed well*about 2 large or 3 small
Cream Cheese Frosting:
8ozcream cheese, room temperature
½cupbutter, room temperature
2tspvanilla
3-4cupspowdered sugar, to taste
Instructions
Preheat the oven to 350 degrees. Coat a 9 x 13 baking dish with cooking spray.
Cream the butter and sugar together with a hand mixer until light and fluffy. Add the eggs, sour cream, and vanilla extract; beat until creamy.
In a small bowl, combine the flour, baking soda, cinnamon, and salt and mix well.
Gradually add the flour mixture to the butter mixture, until just combined.
Add the well-mashed banana and mix until combined. Pour the batter into the prepared baking dish.
Bake for 28-30 minutes, or until a tester inserted in the center comes out clean.
Remove from the oven and let it cool completely on a wire cooling rack.
Meanwhile, prepare the frosting. Use a hand mixer to beat the cream cheese, butter, and vanilla until creamy. Gradually beat in powdered sugar to achieve the desired consistency and sweetness.
Spread the frosting evenly over the cooled cake, cut, and serve.
Store the remaining cake, covered, in the refrigerator. Enjoy.
