Ingredients

of unsalted butter
softened

of brown sugar

of coconut
divided

cup
of white chocolate chips
divided
Instructions
Preheat the oven to 350 degrees, then coat a muffin pan with coconut oil cooking spray.
In a large bowl, beat together the butter and sugar until creamy with a hand mixer or in a stand mixer.
Add the eggs, bananas, and vanilla, then continue beating until well combined.
In a separate bowl, combine the flour, baking soda, and salt, and mix well.
Add the flour mixture to the banana mixture and stir until just combined.
Add the ¾ cup of coconut and most of the white chocolate chips, then gently mix them into the batter.
Spoon the batter evenly into each muffin pan.
Add the last of the white chocolate chips and ¼ cup of coconut equally to the tops of each muffin.
Place in the oven and bake 23-25 minutes or until a tester inserted into the center comes out clean.
Let the muffins cool on a wire cooling rack. Slather with butter and enjoy!
