Ingredients

of brown sugar

overripe bananas
well-mashed

vanilla

of flour

baking soda

of blueberries
divided
1
tbsp
white sugar
for sprinkling on top
Instructions
Preheat the oven to 350 degrees, then coat a muffin pan with cooking spray.
In a large bowl, beat together the butter and sugar with a hand mixer or stand mixer until creamy.
Add the eggs, bananas, and vanilla, then continue beating until well combined.
In a separate bowl, combine the flour, baking soda, and salt; mix well.
Add the flour mixture to the banana mixture and stir until just combined. Add 1 cup of blueberries and gently mix them into the batter.
Spoon the batter evenly into each muffin tin. Add the last ½ cup of the remaining blueberries equally to each muffin, gently pushing them in.
Sprinkle the top of each muffin with some white sugar, if desired. Side Note: This creates a slightly crispy top.
Bake for 20-23 minutes, or until a tester inserted into the center comes out clean.
Let the muffins cool on a wire cooling rack.
Slather with butter and enjoy!
