rice wine vinegar

Sriracha
or more, to taste

can whole water chestnuts, drained and finely diced

green onions
thinly sliced
Sea salt and freshly ground black pepper
to taste

head of butter lettuce leaves
Instructions
Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook, stirring often, for 3-4 minutes, or until tender.
Add the ground chicken and cook until browned, about 4-5 minutes, making sure to crumble the chicken as it cooks; drain excess fat.
Stir in the minced garlic, and cook, stirring constantly, for 1 minute.
Add the hoisin sauce, soy sauce, rice wine vinegar, ginger, and Sriracha, stir to coat evenly. Cook for 1-2 minutes.
Stir in chestnuts and green onions until tender, about 1-2 minutes; taste, then season with sea salt and pepper, to taste.
To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, then fold and eat taco-style. Enjoy.
