Instructions
Preheat the oven to 375 degrees. Coat 2 mini muffin pans with cooking spray.
Combine the flour, baking soda, and salt in a bowl; set aside.
In another bowl, cream together the butter, white sugar, brown sugar, and peanut butter with a hand mixer until creamy.
Add the egg and vanilla and beat until well combined.
Add the flour mixture to the butter mixture and stir until combined.
Cover and refrigerate for 30 minutes, or until the dough is easier to handle.
Shape dough into 20 same-sized balls and place one in each muffin cup. Don't flatten!
Bake for 8-10 minutes, or until puffed up and lightly browned.
Meanwhile, remove the wrappers from the miniature peanut butter cups.
Remove the mini muffin pans from the oven and immediately press the peanut butter cups into the center of each cookie.
Cool completely in the muffin pan. Enjoy!
