Ingredients
Crust:

of powdered sugar

of cold unsalted butter
cut into small pieces

of sweetened shredded coconut

vanilla
Filling:

large eggs

cup
of white sugar

of flour

lemon zest
diced finely
⅓
cup
of freshly squeezed lemon juice
Sweetened shredded coconut for garnish
Instructions
Preheat the oven to 350 degrees. Coat the 8-inch baking pan with coconut oil cooking spray.
Prepare the crust
by combining the flour, powdered sugar, and salt in a bowl.
Add the butter pieces, coconut, and vanilla. Mix with hands until crumbly.
Press evenly into the bottom of your prepared baking pan.
Bake the crust
until lightly golden, about 18-20 minutes. Set the crust aside.
Meanwhile, bake the filling
by whisking together eggs, sugar, flour, and salt.
Add lemon zest and juice, mix until combined.
Pour over hot crust.
Bake the coconut lemon bars
for 15-18 minutes, or until filling is set.
Cool completely on a wire cooling rack.
Slice and serve
, topped with shredded coconut. Enjoy.
