Ingredients

baby red potatoes

olive oil
Sea salt and freshly cracked black pepper
to taste
Dried parsley
to taste
Serving:
Butter
to taste
Sour cream
to taste
Green onions
sliced
Instructions
Preheat the oven to 400 degrees.
Boil the potatoes in a large saucepan of well-salted water for 10-15 minutes or until they are fork-tender.
Drain in a strainer, then place them on a baking sheet coated with cooking spray.
Using a potato masher or the bottom of a glass, gently smash each potato until flat.
Drizzle with olive oil, sea salt, and freshly cracked black pepper, to taste
Bake in the oven for 20-25 minutes or until crisp and golden brown.
Top each potato with butter, sour cream, and green onions. Enjoy.
