Grilled Corn, Avocado, and Tomato Salad with Honey Lime Dressing

Ingredients
Salad:
2ears of fresh sweet corn
1pintgrape tomatoes
1ripe avocadofirm but ripe, diced
2tbspfresh cilantrochopped
Honey Lime Dressing:
3tbspvegetable oil
Juice of 1 lime
1tbsphoney
1clovegarlicminced
Sea salt and fresh cracked pepperto taste
Dash of cayenne pepper
Instructions
Make the dressing by combining the oil, lime juice, honey, garlic, sea salt, freshly cracked pepper, and cayenne pepper to taste in a small glass jar. Seal with lid and shake until well combined. Set aside until needed.
Cook the corn by removing the husk from the corn. Heat a grill pan or grill over medium-high heat, and grill for 10 minutes. The corn should have some brown spots and be tender and not mushy.
Cut the corn off the cob, then scrape the cob with the back of your knife to get the juices. Set aside and let cool.
Prepare the salad by combining the sliced tomatoes, avocado, cilantro, and grilled corn with the well-whisked honey-lime dressing and mix gently so everything is evenly coated. Be careful not to mash the avocados.
Let the salad sit for 10-15 minutes to allow the flavors time to mingle. Enjoy.
