Instructions
Preheat the oven to 250 degrees. Line a baking sheet with parchment paper.
Unwrap the caramels and place them on the prepared baking sheet a few inches apart.
Bake for 5-8 minutes, until soft to the touch but not melted.
Meanwhile, arrange the vanilla wafer cookies, bottom-side up, on a parchment-lined sheet pan that will fit in your refrigerator.
Remove the caramels from the oven while they're still warm, then mold each caramel over the wafer cookies.
Place on the prepared baking sheet, and repeat with remaining caramels and vanilla wafers.
Refrigerate them on the baking sheet for 15 minutes.
When you're ready to coat the bites in chocolate, place the melting wafers and coconut oil in a microwave-safe bowl and microwave for 30 seconds. Remove, stir, and microwave in 15-second intervals until they are melted and smooth, stirring between each interval.
Remove the bites from the fridge.
Using a fork, dip and coat each bite completely in the melted chocolate, letting any excess chocolate drip back into the bowl before transferring it to a parchment-lined sheet pan. Side Note: Let the dipped cookie slide right onto the parchment-lined baking sheet without touching it.
Return the bites to the fridge for a few minutes to let the chocolate set.
Remove, and if you have any excess melted chocolate, drizzle it over the cookies with a fork or spoon.
Let the bites set at room temperature until the chocolate is completely set.
Store the bites in an airtight container at room temperature for up to 2 weeks.
