How to Make Iced Lemon Rounds
Instructions
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
In a small bowl, whisk together flour, baking powder, and salt.
Using a hand mixer or stand mixer, beat the softened butter in a mixing bowl until creamy. Add sugars and beat until smooth.
Beat in eggs, then add lemon zest, lemon juice, and vanilla.
Gradually add the flour mixture, and combine until just incorporated.
Scoop about a tablespoonful of dough and roll it into a ball. Place them on the baking sheet and flatten to about ½ inch thickness.
Bake for about 13-15 minutes until cookies are pale on top but golden on the bottom. Allow them to cool on a wire cooling rack.
Prepare the lemon icing
by whisking powdered sugar, lemon juice, and milk until well combined.
Spread the icing on the cooled cookies with a table knife.
Decorate with sprinkles if desired.
Let the cookies stand on the wire cooling rack until the icing sets. Enjoy.
