Ingredients
Salad:
Frans Vinaigretteto taste (recipe link above)
Homemade croutonsto taste (recipe link above)
2cupsof romaine lettuce
2cupsof mixed greens
3tbspmozzarella pearls
1tbsptoasted pine nuts
Tomatoes:
1tbspgarlic-infused olive oil(or olive oil)
1cupof grape tomatoes
1cloveof garlic
Sea salt and freshly cracked pepperto taste
Instructions
Meanwhile, prepare Fran's simple vinaigrette in a glass jar, then seal with a lid and shake well. Set aside to let the flavors mingle.
Meanwhile, prepare the garlic and herb homemade croutons. Set aside to cool.
Preheat the oven to 350 degrees. Coat a small baking dish with olive oil cooking spray.
Roast the grape tomatoes by placing them in the baking dish. Drizzle with olive oil and minced garlic, then season with sea salt and freshly cracked pepper to taste. Toss to coat the tomatoes evenly.
Roast for 20-25 minutes.
Remove from the oven and cool.
Prepare the salad by placing the romaine lettuce and mixed greens into a serving bowl.
Top with the cooled roasted tomatoes, mozzarella pearls, homemade croutons, and toasted pine nuts.
Drizzle with some well-shaken vinaigrette to taste, and mix well until evenly coated.
