Instructions
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
In a large bowl, beat together the butter, brown sugar, egg, and vanilla using a hand mixer or stand mixer until smooth and creamy.
Whisk the flour, baking soda, salt, and cinnamon together in a separate bowl.
Slowly add the flour mixture to the butter and sugar mixture.
Stir in the oats and raisins and mix until combined.
Place dough by the spoonful on the prepared baking sheet.
Bake in the oven for 10-12 minutes or when the cookies are golden at the edges.
Let the cookies sit for a minute before moving them to a wire cooling rack.
