Oatmeal Whole Wheat Peanut Butter Bars with Chocolate Chips

Ingredients
Cookie Base:
4tbspunsalted buttersoftened
¼cupsugar
¼cuppacked brown sugar
1small eggslightly beaten
2½tbspsmooth peanut butter
½tspof vanilla extract
½cupquick oats
½cupwhole wheat flour
¼tspbaking soda
⅛tspsalt
6ozsemisweet mini chocolate chips
Glaze:
¼cuppowdered sugarsifted
2tbspsmooth peanut butter
1-2tbspmilkdepending on how thick you want the glaze
Instructions
Preheat the oven to 350 degrees. Coat an 8 x 8-inch baking dish with cooking spray.
Cream the butter, sugar, and brown sugar with a hand mixer until creamy and smooth.
Add the egg, peanut butter, and vanilla and beat until creamy and well combined.
Combine the oatmeal, whole wheat flour, baking soda, and salt in a bowl.
Add the oatmeal mixture to the butter mixture and mix well.
Spoon the mixture into the prepared baking dish. The filling will be sticky so wet your hands to pat the dough down into the pan.
Place into the oven to bake for 15-17 minutes or until golden brown.
While the cookie base is baking combine the peanut butter, powdered sugar, and milk until well combined.
Place the mixture into a small zip-lock bag and seal.
Remove the cookie base from the oven and pour the chocolate chips on top while it's still hot so that the chocolate chips will melt and ooze all over the cookie base.
Cut a small piece out of the corner of the bag filled with the glaze then drizzle the peanut butter glaze on top of the chocolate chips.
Allow it to cool before cutting into bars and serving. Enjoy.
