Ingredients
1tbspolive oil
Juice & zest of one lemon
1tbspshallotfinely diced **If the shallot is too strongly flavored, dice it and soak it in ice water for 10 minutes
1cloveof garlicminced
Sea salt and freshly cracked pepperto taste
1bunch of asparaguswooden ends trimmed
Parmesan cheeseshredded
Instructions
Combine the olive oil, lemon zest, lemon juice, shallot, garlic, sea salt, and freshly cracked pepper with a whisk until well combined. Set aside to let the flavors mingle. Side Note: If your shallot's flavor is too strong, soak in cold water for a few minutes before making the vinaigrette.
Heat a grill pan over medium heat and coat it with cooking spray. Place the asparagus on the grill pan and season with sea salt and freshly cracked pepper, to taste.
Cook the asparagus for 3-4 minutes then flip and cook for another 2-3 minutes or until tender.
Toss the asparagus with some of the lemon vinaigrette then place onto a serving platter and sprinkle it with Parmesan cheese.
Serve the asparagus with the remaining sauce on the side. Enjoy.
