4bonelessskinless chicken breasts, trimmed of fat
¾cupof pestodivided
1tbspolive oil
1yellow onionsliced
Sea salt and freshly cracked pepperto taste
8slicesof Havarti cheese
For Serving:
8hamburger buns
Mayonnaise
Lettuce leaves
Tomato slices
Instructions
Cut each chicken breast into two pieces. Place the chicken between two pieces of plastic wrap and pound each piece until they are thin.
Place chicken in a large zip-lock bag with ½ cup of pesto and marinate for at least 2 hours.
Heat olive oil in a large skillet over medium heat. Add onion slices and saute for 15-20 minutes, stirring often, until caramelized. Season with sea salt and freshly cracked pepper, to taste. Side Note: Add a little water to the skillet if the onions become dry.
While the onions are cooking, heat a grill or grill pan over medium-high heat.
Place the chicken breasts on a hot grill or grill pan and grill them for 5-6 minutes.
Flip over and cook for 5-6 minutes, or until they are cooked through.
Cook for 2-3 minutes, then add the cheese and continue to grill for 2-3 minutes, or until the cheese is melted and the juices run clear.
Toast the buns, spread mayonnaise and pesto on each side, then layer with chicken and Havarti, caramelized onions, lettuce, and tomato. Enjoy!
