Ingredients

cup
of butter
softened

of white sugar

very ripe large bananas
well-mashed
2
eggs
1
tsp
vanilla extract

of flour

tsp
baking powder
½
tsp
baking soda
½
tsp
salt
½
cup
pineapple tidbits
drained
½
cup
sweetened shredded coconut
plus more for topping
½
cup
white chocolate chips
Instructions
Preheat the oven to 350 degrees. Coat a loaf pan with cooking spray.
Using a hand mixer or stand mixer, cream the butter and sugar together in a bowl.
Beat in the banana. Beat in the eggs and vanilla extract.
In a separate bowl, mix the flour together with the baking powder, baking soda, and salt.
Add the flour mixture to the banana mixture until just combined.
Stir in the pineapple, coconut, and white chocolate chips.
Pour the batter into the prepared loaf pan.
Sprinkle a little more coconut on top of the batter.
Bake in the oven for 65-70 minutes, or until a tester inserted in the center comes out clean.
Cool in the pan for 10 minutes; remove to a wire cooling rack.
Slice and serve. Enjoy!
