Pork Chops with Tomatoes, Caramelized Onions, and Feta Cheese

Ingredients
2tbspolive oildivided
½yellow onionsliced thinly
3clovesof garlicminced
Sea salt and fresh cracked pepper
5thin-cut pork chops
1handful of red grape tomatoes
1handful of yellow grape tomatoes
2-3tbspof feta cheeseto taste
2tbspfresh basilchopped
1tbspbalsamic vinegar
Instructions
Heat 1 tbsp olive oil in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until they are lightly golden brown and slightly caramelized, about 15-20 minutes. Side Note: If the onions become too dry, add a little water as they cook.
Add minced garlic, and cook, stirring constantly for 60 seconds. Season them with sea salt and freshly cracked black pepper to taste. Remove them from the large skillet and set aside.
In the same large skillet, heat the remaining tablespoon of olive oil over medium-high heat and season the pork chops with sea salt and freshly cracked pepper, to taste.
Once the skillet is hot, add the pork chops. Cook for 2-3 minutes before flipping over. Cook for an additional 1-2 minutes to the desired degree of doneness.
Remove from the heat to a serving platter. Let pork rest for 3-5 minutes before slicing so it stays nice and juicy.
Add the grape tomatoes and cooked onions to the same skillet, then season with salt and pepper to taste. Cook for 3-4 minutes, until ready to burst
Pour the tomatoes and onions on top of the pork and top with feta cheese and fresh basil.
Drizzle with the balsamic vinegar and serve. Enjoy!
