Garlic Butter Roasted Carrots

  • 1 tbsp butter
  • 1 large clove of garlic minced
  • 1-2 tsp olive oil
  • Sea salt and freshly cracked pepper to taste
  • 1 bunch of carrots peeled & sliced into coins


  • Preheat the oven to 425 degrees.
  • Melt the butter with the minced garlic in the microwave for 25-30 seconds; set aside to allow the flavors to mingle.
  • Toss the carrots with a drizzle of olive oil and season with sea salt and freshly cracked pepper, to taste; toss to coat evenly.
  • Spread out on the baking sheet and place into the oven for 10 minutes.
  • Flip the carrots and continue roasting for 10 minutes.
  • Drizzle the carrots with the garlic butter and toss to coat evenly.
  • Continue roasting another 5 minutes or until the carrots are fork-tender and a bit caramelized.
  • Remove from the oven and place in a serving bowl.
  • Serve immediately. Enjoy.
