Ingredients

cup
of jasmine
white, or brown rice, prepared per instructions
1
tbsp
butter
1
tsp
lemon zest
4-5
dried apricots
chopped into small pieces, to taste
¼
cup
pistachio nuts
shelled, chopped
1
tbsp
fresh parsley
chopped
Sea salt and fresh cracked pepper
to taste
Instructions
Prepare the rice in a large saucepan per instructions.
Once the rice is done, stir in the butter and lemon zest.
Stir in the dried apricots, pistachios, and parsley, then season with sea salt and freshly cracked black pepper.
Mix thoroughly and serve immediately. Enjoy.
