Spaghetti with Garlicky Spinach, Parmesan, and Toasted Pine Nuts

Ingredients
2ozspaghetticooked per package instructions (reserving ½ cup cooking liquid)
½tbspolive oil
2cupsfresh baby spinach
Pinchof crushed red pepper flakesto taste
1large clove of garlicminced
1tbspbutter
1tbsptoasted pine nuts
Parmesanfreshly grated
Sea salt and freshly cracked pepperto taste
Instructions
Cook the pasta in a large pot of well-salted boiling water to al dente, according to the package instructions. Drain, reserving ½ cup of the cooking water.
Drain the pasta using a strainer, reserving ½ cup of the cooking water.
Before the spaghetti is finished cooking, heat the olive oil in a large skillet over medium heat.
Add the spinach and crushed red pepper flakes, stirring constantly, for 30 seconds.
Add the minced garlic and butter, and cook, stirring constantly for another 30-45 seconds, or until the spinach is just wilted.
Add the drained spaghetti and ¼ cup of the reserved cooking water, tossing to coat the pasta.
Add the toasted pine nuts and some freshly grated Parmesan, and season with sea salt and freshly cracked pepper to taste.
Pour the pasta into a serving bowl and top with more grated Parmesan and black pepper if desired. Enjoy
