Ingredients
Chutney:
1tbspbutter
3applespeeled and diced
¼cupdried cranberries
3tbspbrown sugar
3tbspcider vinegar
2tspfresh gingerpeeled and minced
¼tspsalt
¼tspdry mustard
⅛tspground allspice
Pork:
3-4boneless thick cut pork loin chops
Chili powderto taste
Garlic powderto taste
Ground corianderto taste
Sea salt and freshly crackedto taste
Instructions
Make the chutney by melting butter in a small saucepan over medium heat. Add the apple and sauté for 6 minutes or until lightly browned.
Add cranberries and the remaining ingredients; bring to a boil. Reduce the heat and simmer for 10-12 minutes or until apples are tender, stirring occasionally.
Prepare the pork chops while the chutney simmers. Season the pork chops on both sides with the seasonings to taste.
Heat a grill pan that is coated with cooking spray over medium-high heat.
Add pork to the hot grill pan and cook for 4 minutes on each side or until done.
Let the meat rest for 5 minutes before serving with chutney. Enjoy.
