pork tenderloin
trimmed and cut crosswise into 12 pieces

butter

Gala apples
thinly sliced

small shallot
sliced

cup
of apple cider
1
tsp
fresh thyme leaves
Instructions
Heat the olive oil in a large skillet over medium-high heat.
Combine the salt, coriander, pepper, cinnamon, and nutmeg.
Sprinkle the spice mixture evenly over pork slices.
Add the pork to the pan when it's hot and cook for 5 minutes on all sides, or until the desired degree of doneness.
Remove the pork from the skillet to a plate with a foil tent.
Melt butter in the pan; swirl to coat. Add the apple slices, shallots, and a pinch of salt; sauté for 4 minutes, or until the apple starts to brown.
Add apple cider to the large skillet, and cook for 2 minutes, or until the apple is crisp-tender.
Stir in the thyme leaves and taste the sauce. Re-season with salt and pepper if desired.
Serve the pork slices drizzled with the apple slices and sauce.
