pumpkin puree

creamy peanut butter

old fashioned quick oats

whole wheat flour, divided,
or more, as needed

baby spinach
finely chopped

carrots

zucchini

Instructions
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
Whisk the pumpkin puree, peanut butter, and eggs until well combined, about 1-2 minutes.
Gradually add old-fashioned oats and 2 1/2 cups of whole wheat flour, mixing with a rubber spatula just until incorporated.
Add an additional 1/4 cup flour at a time just until the dough is no longer sticky.
Add spinach, zucchini, and carrot, mixing until just incorporated.
Working on a lightly floured surface, knead the dough 3-4 times until it comes together.
Using a rolling pin, roll the dough to 1/4-inch thickness.
Use a cookie cutter to cut out the desired shape and place it onto the prepared baking sheet.
Place into oven and bake until the edges are golden brown, about 20-25 minutes.
Remove from the oven and allow to cool completely on a wire rack.
Store in a sealed container in the refrigerator. Enjoy.
