Prepare the cooking water by adding a bay leaf & garlic cloves to a large pot with a few cups of water over medium-high heat. Place the steamer in the pot.
Prepare the artichokes for cooking by trimming off the sharp ends of the artichoke leaves with scissors, if desired. Cut the top and stem off and clean well.
Cook the artichokes by placing them in the steamer and covering with a lid.
Steam for 35-45 minutes, depending on their size, or until the leaves can be easily removed.
Meanwhile, make the soy garlic aioli by combining the mayonnaise, garlic, and soy sauce until well-mixed.
Remove from the steamer and set on a serving plate.
Serve hot or at room temperature with your preferred dipping sauce. Enjoy.
Eat the artichokes by dipping the bottom end of your leaves in the aioli, garlic butter, or mayonnaise.
Once you get down to the artichoke heart, remove the fuzzy covering with a spoon, then dip the artichoke heart in the aioli and eat. Enjoy.
