Preheat the oven to 400 degrees. Line a baking sheet with cooking spray.
Make the salsa by dicing the mango and strawberries, then place them in a bowl. Add the juice and zest from half of a lime, the sugar, and the parsley to the bowl. Mix to combine. Taste and add more sugar if needed. Chill in the refrigerator until needed.
Make the cinnamon chips by spreading a bit of butter over each tortilla.
Combine the sugar and cinnamon until well combined. Sprinkle the cinnamon sugar evenly over the buttered tortillas. Slice the tortillas into wedges using a pizza cutter or knife.
Cook the cinnamon chips by placing them on the baking sheet in a single layer.
Bake for 5-7 minutes, or until crisp and golden brown.
