Banana Chocolate Chunk Muffins
These banana chocolate chunk muffins are delicious banana muffins that are studded with chunks of chocolate! I had very ripe bananas on the counter that needed to be used up so I made these tasty little gems from a recipe I found on Life Made Simple. I used both chocolate chips and chunks of chocolate in these muffins and topped them with turbinado sugar before baking which gives them a bit of crispness. My kids are big muffin fans so their eyes lit up when they saw these little beauties on the counter fresh from the oven. These banana chocolate chunk muffins were easy to throw together, tasted wonderful, and made my kids pretty happy.
How to Make Banana Chocolate Chunk Muffins
Preheat the oven to 425 degrees. Coat a muffin pan with cooking spray.
Prepare the banana bread muffins by whisking together the flour, baking powder, and salt together in a small bowl until well combined.
In a separate bowl whisk together the sugar, vegetable oil, melted butter, eggs, and vanilla until well combined. Add the mashed banana and mix well.
Alternate mixing in the dry ingredients and the buttermilk to the banana mixture until just combined. Fold in the chocolate chunks and chocolate chips.
Pour the batter equally into the muffin pan filling them to the top. Sprinkle some coarse turbinado sugar on top of each muffin.
Place into the oven and bake for 5 minutes. Reduce the heat to 350 degrees and continue to cook for 13-15 minutes, or until a tester inserted in the center comes out clean. Remove from the oven and cool in the pan for a few minutes before putting them on a wire rack to finish cooling. Serve and enjoy.
Side Note: Starting the baking at a higher temperature then reducing it helps make the muffin dome.
