Peanut Butter and Honey Granola

This easy peanut butter and honey granola recipe takes minutes to make, uses pantry staples, and tastes better than store-bought granola. My favorite sandwich growing up was peanut butter and honey, so when I saw this recipe on Simply Scratch, I had to make it immediately. I had a hard time stopping myself from nibbling on this peanut butter granola when photographing it because it is delicious! I plan on having it on some vanilla ice cream tonight and with yogurt for breakfast tomorrow. YUM!
Peanut Butter and Honey Granola
Ingredients:
- 3 cups old-fashioned rolled oats
- ⅓ cup honey roasted peanuts, chopped
- ¾ tsp cinnamon
- ¼ tsp salt
- Pinch of nutmeg, to taste
- ½ cup creamy peanut butter
- ⅓ cup honey
- 3 tbsp coconut oil, melted
- 1 tsp vanilla extract
How to Make Peanut Butter and Honey Granola
Preheat the oven to 300 degrees.
Combine the oats, chopped peanuts, ground cinnamon, salt, and nutmeg together in a bowl; mix well.
Whisk together the peanut butter, honey, melted coconut oil, and vanilla extract until well combined and creamy.
Pour the peanut butter mixture over the oats and stir until the oat mixture is evenly coated.
Pour onto a rimmed baking sheet.
Place into the oven and bake for 35-45 minutes, stirring every 15 minutes, until golden brown.
Remove from the oven and allow to cool completely.
Store in an airtight container at room temperature for three weeks or freeze for up to three months. Enjoy.
