Heat 1 tablespoon of butter or olive oil in a skillet over medium heat. Once the skillet is hot, add mushrooms and onions and cook, stirring occasionally, for about 5 minutes or until tender and golden brown. Remove and set aside in a bowl.
Add the remaining butter to the large skillet. Once melted, add the egg mixture and slowly cook, turning frequently with a rubber spatula.
Once the eggs are cooked, remove from the heat and stir in the mushrooms, onions, and cheese. Season the mixture with crushed red pepper flakes, sea salt, and freshly cracked pepper.
Scoop eggs onto a toasted English muffin and serve. Enjoy.
