Camping Cuisine - Breakfast Sandwiches

One of the best things about camping is drinking your morning coffee around the campfire while eating a tasty breakfast. I always seem to have a huge appetite while camping, maybe it’s the fresh air or all the activities and adventures we do. I made breakfast sandwiches with scrambled eggs, mushrooms, onions, and cheese one morning, and they were so good. I served them with crispy hash browns, sausage links, and fruit salad. It was a filling and delicious breakfast that was quick and simple to make.

Camping Cuisine – Breakfast Sandwiches

Ingredients:

  • 2 tbsp butter or olive oil, divided
  •  8 oz of mushrooms, sliced
  • ½ yellow onion, diced
  • 12 eggs, whisked very well
  • Sharp cheddar cheese, shredded
  • Pinch of crushed red pepper flakes
  • Sea salt and fresh cracked pepper, to taste
  • English muffins, toasted

How to Make Breakfast Sandwiches:

Heat 1 tablespoon of butter or olive oil in a skillet over medium heat. Once the skillet is hot, add mushrooms and onions and cook, stirring occasionally, for about 5 minutes or until tender and golden brown. Remove and set aside in a bowl.

Add the remaining butter to the large skillet. Once melted, add the egg mixture and slowly cook, turning frequently with a rubber spatula.

Once the eggs are cooked, remove from the heat and stir in the mushrooms, onions, and cheese. Season the mixture with crushed red pepper flakes, sea salt, and freshly cracked pepper.

Scoop eggs onto a toasted English muffin and serve. Enjoy.

    My wife and I are leaving for a one week camping trip in the Black Hills of South Dakota in a few weeks (we will be flying into Rapid City and renting one of those camper rig things).

  6. Yum! We often do breakfast burritos, very similar to your creation but lacking the english muffin. I can’t wait to try this.
